Pinot Nero: Soft pressing in order to obtain just the free-run juice. Fermentation takes place with the aid of very carefully selected yeasts. After this has been completed, and following a number of rackings, the wine is stored on its lees. Raboso: The grapes are picked in the Gellisaia vineyard and are then dried on racks. The must ferments on the skins and after fermentation, the wine goes into oak casks for a brief period of time

Tasting Note:  Deep pink with hints of crimson, the wine has a perfumed floral bouquet, with elegant yet intense notes of wild berries and morello cherries. It is full, tangy with rounded fruit on the palate.

Every day serving suggestion: At 8 to 10C to accompany seafood risottos, richly flavoured fish such as salmon, trout and eel, white meats and goat’s cheese.
