The Ashburne Sandstone is the result of Anthony Hamilton Russell's determination to produce a long-lived, lower alcohol, un-wooded wine from a blend of white grapes all grown on light structured, free-draining, Table Mountain Sandstone derived soils. The wine is released after a certain amount of secondary bottle-age character has developed. The Sauvignon Blanc, being particularly successful on sandstone soils, is the main grape, structurally and aromatically, with other partners contributing to the age-worthiness and palate depth and structure without competing with the aromatics.The name Ashbourne is a family name from Anthony’s grandmother’s side. Lord Ashbourne, Anthony’s great, great grandfather, was Lord Chancellor for Ireland in the late 1800’s.
Vinification: The Sauvignon Blanc and Chardonnay are fermented in stainless steel with 3 months lees contact and the Semillon is barrel fermented for 6 months.
Tasting Note: Dry, crisp and mineral with a touch of baked apple on the finish.
